After two evenings of cooking dinner on the grill, I wanted to tell you how to cook vegetables on the grill for simple and fun snacks. Of course, there are a lot of snacks on the coals, a special place is occupied by shish kebab. But today we will talk about vegetable snacks: champignon hats (read “here” for recipes for their preparation at home), baked corn, eggplant, etc.

As practice has shown, in order to find the ideal ratio of heat, food thickness, cooking time, you just need to try. I’ll tell you our yesterday’s experience + the recipe told by the hospitable owner of the dacha, where we tried to cook all this.

Champignons with sour cream

We take as many mushrooms as we have, wash them, carefully break off the legs. Finely chop the legs, finely chop the onion (the amount of onion is at your discretion, about 0,5 onions per 0,5 kg of mushrooms), mix it all with sour cream (300-400 ml per 0,5 kg of mushrooms). Add salt, pepper, you can greens.

By the way, who is not afraid to eat raw champignons, you can try this mixture – it is great, including as a snack.

Then we fill the hats with this mixture (a little with a cap) and put it on the grid over the coals. The heat is medium, let them bake gradually so that not only mushrooms, but also “minced meat” – sour cream with onions and legs, reach readiness.

Determination of readiness – juice is released, mushrooms are easily squeezed with fingers (not elastic), the mixture sags and becomes more homogeneous. It is better to eat hot, without any sauces, you can have a bite of vodka, beer and other drinks that can be found near the barbecue.

Eggplant stuffed with … something

I will say right away that the appetizer is not for everyone, for some reason there are not many lovers. Some bake whole eggplants on skewers or in a net, after making cuts on them. I don’t really like this option, but stuffing is more attractive. To understand how to cook vegetables on the grill just the way you like it, you should try to do it at least in several ways.

We left onions marinated in apples and honey from the chicken. We then stuffed eggplants with them. We make several cuts along (3-5, depending on the size), salt, pepper, seasonings, everything. And there we tightly put the onion (if desired, greens, mushrooms, lard, etc.). That’s it, put it over the coals (medium-strong heat, low enough) and bake until very soft, so that the juice stands out and there are no hard edges.

Eggplants are better either with meat or with sauce, because they are quite “neutral” by themselves.

Corn baked in leaves

Haven’t tried baking, maybe next time. I write according to stories: we pick / buy corn, do not cut the leaves, put it directly in the coals and bake it. It is better to take young or not very young corn (not old), bake until more or less soft. Let’s try 😉
